ManualStaff updates each dish as it moves through the kitchen. Automatic estimateAdvance dishes through Preparing and Cooking to Ready using their saved times.

Automatic mode starts open dishes from their current stage. Staff still marks Served and Completed. Changing a dish manually restarts its estimate from that stage.
